The early bird catches ..the fish.
By this point there are 16 professional fisheries on Lake Chiemsee, Fishery Lex is one of them. The family business is being run since 1857 in the sixth generation, making them one of the oldest fisher families on the lake.
Their speciality is Chiemsee-Renke, a fish whose skin turns golden when gently cured over beech wood.
I accompanied them for a morning and followed the journey of the golden fish.

In order to ensure sustainable fishing and safe the population only fish are being caught that have already spawned. The fishermen regulate this with the mesh size of their nets: When a fish is too young and hence smaller, it will simply swim trough the net.
The size of the mesh is determined by the Chiemsee fishermen's association and is mandatory for every one of the 16 professional fisheries on the lake.
Fishery Lex is located on Fraueninsel, one of the three islands on Lake Chiemsee.
Three generations are currently working together hand in hand at the fishery: Holmer Lex, Thomas Lex and the brothers Florian and Tassilo Lex.
After collecting the day's catch, the fish are being descaled by hand, filleted and removed from all fish bones.

The whitefish that have been salted the night before are then being smoked over beech wood. They stay in the smokehouse for about three hours and..
.. come out in a bright gold colour.
Holmer Lex
In the late morning the catch is being presented in the counter of their own shop on the island - either cured or as fish sandwich.
